Soak the bulgur in lemon juice until the grains soak up all the lemony flavour.

So start the bulgur first, then sharpen your knife and get chopping. By the time you finished mincing the herbs and vegetables, the bulgur will be plump and tart.

Place the chopped vegetables in a large bowl. Add the optional mint. Season with salt and pepper. Then pour the bulgur and olive oil over.

Give everything a good toss
