BBQ dinners are life. Nothing beats that quick clean up and the chill vibes when cooking outside with your favourite people.
What’s in our Marinade?
Is it traditional? Maybe not⏤ Inspired? DEFINITELY! Greek flavours often contain garlic, lemon, oregano, olive oil, and red wine vinegar. This flavour combo is delicious in every way and takes whatever it touches to the next level. We wanted to make a simple greek marinade that would be a perfect go-to for any night of the week. Our greek marinade has:
- A generous amount of olive oil
- Lots of fresh garlic
- Oregano
- lemon juice
- Smoked paprika
- Red Wine Vinegar
- plenty of fresh cracked pepper
How Do You Make the Easiest Greek Grilled Chicken?
We’ve come up with a quick, straightforward way to make this delicious chicken recipe and you are going to love how simple it is. Here’s how it’s done:
- Add ALL the marinade ingredients to your bowl.
- Coat the chicken with the marinade and toss it on the grill.
- Save a little of the leftover marinade, apply to chicken during the last few minutes of grilling
- Pat yourself on the back for a job well done!
How to Prepare Chicken Breast for the Grill?
The thing about chicken breast is that they are typically not an even thickness. This means that the thinnest part tends to dry out before the thickest part is cooked all the way through. So how do we solve this? Simple, flatten the chicken out to an even thickness.
- Cut the chicken breast in half along the length of it.
- Cover it using plastic wrap ⏤ why? because "I love being covered in raw chicken juice!" said no one ever!
- Let's get out some of that frustration! ⏤ Using a meat mallet, pound that chicken to an even thickness, the goal is to have the chicken breast the same thickness all the way across.
- Marinate. We all need a little flavour in life.
Tips for Grilling Any Chicken
- Allow time to marinate the chicken. Marinate for at least 30 minutes, but up to 8 hours in the fridge. That will help tenderize the chicken, make it juicier and incorporate the maximum amount of flavour.
- Oil your grill. Oiling your grill when it's still cold helps prevent the chicken from sticking to the grill. Just add some oil onto a paper towel and rub onto the grates.
- Don’t overcrowd the grill pan or the grill. You want the chicken to grill evenly and brown well. Otherwise, the juices from the nearby chicken tenders may create steam which will affect the searing process.
- Don’t move around while it’s cooking, if you want to achieve those beautiful sear marks and prevent the food from sticking to the grill DON'T move it too early ⏤ A very important chicken hack! When you turn the chicken, they should be easy to move, if they stick, leave them a little longer.
- Allow the chicken to rest for 5 minutes before cutting. This allows the chicken a chance to absorb the juices and become tender and flavourful.

This seems like it would have a simple answer, but it's all about your preferences and health concerns or recommendations from your dietician. It is lean and very tasty when marinated and cooked with the correct grilling technique. Boneless chicken thighs can stand up to a lot of heat and benefit from longer cooking times. Therefore, I recommend using the chicken parts you prefer for this recipe, all parts of the chicken offer their pros and cons.
Should I keep the grill lid open or closed when grilling chicken?
If you're using chicken tenders that are small, they only need to be grilled for 3-4 minutes per side, there’s no need to close the lid. You’ll want to close the lid for thighs and thicker cuts of chicken that need more cooking time and need the heat to penetrate through. The most important part of grilling chicken is to ensure the internal temperature, when cooked, is 165ºF.

Easiest Greek Grilled Chicken
Ingredients
- 4 chicken breasts prepared for grilling
- ¼ cup olive oil
- 2 tablespoon red wine vinegar
- 1 lemon juiced and zested
- 2-3 garlic cloves
- ½ teaspoon smoked paprika
- 1 teaspoon dried oregano
- ¼ teaspoon fresh cracked pepper
- ½ teaspoon sea salt
Instructions
- Mix. In a large bowl, add the olive oil, vinegar, lemon juice, zest, garlic, paprika, oregano, and salt. Mix everything together.
- Marinate. Add the chicken to the bowl of marinade. Cover the bowl of chicken with plastic wrap. Set in the refrigerator and allow to marinate for at least 30 minutes, but it's best to marinate 1 hour up to 6 hours.
- Heat your BBQ. Whether you use a grill or grill pan, oil the grills well while the grill is still cold. For the BBQ, preheat to 400ºC before adding the chicken. As for the grill pan pre-heat to a Medium-High.
- Cook. Place the chicken on the grill and cook for 5-7 minutes on each side. Your chicken is fully cooked once the internal temperature 165ºC.
- Rest. Allow the chicken to rest for 5 minutes before cutting. This allows the chicken's juices to redistribute.
- Serve! The best part of cooking. Serve this chicken with your favourite sides.
