- Flax Seed: Used for the binding and Omega 3. Flaxseeds are a great way to boost the nutrients and bind the oat without eggs.
- Milk: You can use any kind of milk you want for this recipe.
- Banana: I recommend using an overripe banana; they offer the best taste. If you don't like bananas, then swap with ½ cup of apple sauce.
- Maple Syrup: Oats and maple syrup are the perfect couple. Not only is the flavour combo outstanding, but it also makes the oatmeal extra moist. Choose a pure maple syrup for the best flavour, and it's free from high-fructose corn syrup. You can also use honey, coconut sugar, or regular brown sugar.
- Melted Butter: I love using butter for this recipe; it gives the oats a good texture and helps avoid a rubbery texture. However, Ghee or coconut oil also works great with this recipe too.
- Baking Powder: Gives the Oats a nice fluffy lift. Be careful not to confuse it with baking soda! I recommend choosing an aluminum-free brand.
- Cinnamon & Vanilla: These offer baked oatmeal sweet flavour notes.
- Berries: I used a mixture of fresh strawberries, blueberries, and raspberries; you can also use frozen berries.
- Nuts & seeds: You any nuts and seeds you have on hand. My favourite combo is almonds, pumpkin seeds, sunflower seeds, and pistachios.
How to make Baked Berry Oatmeal?
Making baked oatmeal is as simple as 1,2,3. It's long to get your ingredients out of the pantry than it takes to whip up a batch of baked oats.
- Mash a banana in a large bowl, then add all of the wet ingredients and stir. Toss in the oats, baking powder, flaxseed, spices, and fruits of your choice.
- Pour into a baking dish. Sprinkle on the nuts and if you want to be a little extra bougie 👸🏻, then mix the nuts with a bit of ghee and maple syrup before placing on top.
- Bake for 35 minutes, and you've dish to feed your family...all well enjoying your cup of coffee and avoiding the mornin insanity.
Recipe Tips
- If you want a deliciously soft & moist spoonful of baked oatmeal, use whole oats and don’t over-bake!
- Don't make the batter ahead of time. The oats will soak up all the liquid! So Stir & Bake is the way to go!
- Change up the fruits with the season. Let's be honest, we all love a bit of variety, so change the spices and fruit with the season.
- Complete your Breakfast! Serve your baked oatmeal with Greek yogurt, more fresh fruits, or a smoothie. My favourite way to eat baked oats is with warm milk, fresh berries, and extra maple syrup poured on top.

Baked Berry Oats
Equipment

Ingredients
- 2 cups rolled oats
- 1 teaspoon baking powder
- 1 teaspoon cinnamon ground
- ½ teaspoon salt
- 2 tablespoon flaxseed ground
- 2 cup mixed berries fresh or frozen
- ½ cup Nuts & Seeds
Wet Ingredients
- 2 cups milk of your choice
- ¼ cup maple syrup
- 1 teaspoon vanilla
- 1 tablespoon ghee
- 1 banana overripe, mashed
Instructions
- Preheat the oven to 375° F. Grease an 8×11 inch baking dish.
- In a large mixing bowl, mashed banana, then add the milk, flaxseed, ghee, vanilla extract and maple syrup, mix all of the wet, until smooth.
- Toss the oats, cinnamon, baking powder, salt and berries in the wet mixture. Stir until all the oats are covered in the wet mixture.
- Pour the oat mixture into your prepared baking dish, then sprinkle the nuts and seeds on top of the oatmeal.
- Bake uncovered in the preheated oven until the top of the oatmeal is golden, and the mixture is set⏤for about 35 minutes. Remove and allow it to cool for 5 minutes.
- Serve with your favourite topping, and of course, an extra drizzle of maple syrup is always welcomed.
